Instructions
Preparation Steps
Cook the rice noodles according to package instructions. Drain and set aside.
In a large skillet, heat the coconut milk over medium heat until simmering.
Add bell peppers and broccoli to the skillet. Cook for about 5 minutes or until tender.
Stir in soy sauce, lime juice, garlic powder, and ginger. Mix well.
Fold in the cooked noodles and heat through for another minute.
Serve warm, garnished with additional lime wedges if desired.
Notes
Add chopped cilantro for an extra flavor boost. Pair with grilled shrimp for a protein punch!
