Instructions
Preparation Steps
In a large pot, heat some olive oil over medium heat. Add diced onions and sauté until translucent.
Stir in garlic, carrots, and celery. Cook for about 5 minutes until the vegetables soften.
Add the diced tomatoes with their juice, vegetable broth, and drained cannellini beans. Stir well.
Season with oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Adjust seasoning to taste and enjoy hot.
Notes
