Preparation Steps
In a large skillet, heat olive oil over medium heat. Add diced bell pepper and sauté until soft, about 3-4 minutes.
Whisk the eggs in a bowl with cumin, salt, and pepper. Pour into the skillet with the vegetables.
Cook the eggs, stirring occasionally, until just set, about 5 minutes. Fold in the black beans and cheese.
Warm the tortillas in a dry skillet. Scoop the egg mixture onto each tortilla and roll tightly.
Serve with your favorite salsa or avocado on the side.
