Preparation Steps
Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, incorporating well after each addition.
Mix in the mango puree and lime juice until blended.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
Scoop the batter into the prepared cupcake liners, filling each about 2/3 full.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool completely on a wire rack before serving.
Notes
For added flair, frost with key lime cream cheese frosting and garnish with fresh mango slices. These cupcakes are best served chilled.
