Instructions
Preparation Steps
In a bowl, combine chicken pieces with olive oil, oregano, salt, and pepper. Stir to coat evenly.
Heat a skillet over medium heat. Add the chicken and cook until golden brown and fully cooked, about 8-10 minutes.
In another bowl, mix quinoa, cucumber, tomatoes, red onion, and feta cheese.
Toss the cooked chicken with the quinoa salad. Drizzle with lemon juice before serving.
Notes
