Instructions
Preparation Steps
In a large bowl, combine flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Gradually add ice water, mixing until dough begins to come together. Divide dough into two discs, wrap in plastic, and chill for at least 1 hour.
Preheat oven to 375°F (190°C). In a separate bowl, mix blueberries, brown sugar, lemon juice, and cornstarch until well combined.
On a lightly floured surface, roll out chilled dough to about 1/8 inch thickness. Cut dough into 4-inch circles.
Spoon blueberry mixture onto center of each circle, leaving a 1-inch border. Fold edges up, pleating dough to form rustic galettes.
Brush dough edges with beaten egg wash. Place galettes on a parchment-lined baking sheet.
Bake galettes for 20-25 minutes until crust is golden and filling is bubbly. Cool slightly before serving.
Notes
Serve warm with a scoop of vanilla ice cream for an extra indulgence.
