Instructions
Preparation Steps
Heat the olive oil in a large skillet over medium heat.
Add garlic and sauté until fragrant, about 1 minute.
Stir in cherry tomatoes and cook for 3-4 minutes until they begin to soften.
Add the pasta, salt, pepper, and enough water to cover. Bring to a boil.
Reduce heat and simmer, stirring occasionally, for 10-12 minutes or until pasta is tender.
Once pasta is cooked, stir in the spinach until wilted.
Serve warm, topped with grated parmesan cheese if desired.
Notes
This dish pairs well with a light salad. For extra flavor, add a pinch of red pepper flakes.
