Instructions
Preparation Steps
Cook orzo according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat.
Add minced garlic and sauté for 1 minute until fragrant.
Stir in asparagus and cook for about 5-7 minutes until tender.
Mix in the cooked orzo, salt, pepper, and lemon zest. Stir well.
Remove from heat and gently fold in crumbled feta cheese.
Serve warm, topped with grated parmesan cheese.
Notes
Add toasted pine nuts for extra crunch!
