Instructions
Preparation Steps
Bring vegetable broth to a boil in a large pot.
Add ramen noodles and cook for 3-4 minutes until tender.
Stir in carrots, bell peppers, and mushrooms; simmer for another 5 minutes.
Add soy sauce and sesame oil; mix well to combine.
Serve hot, garnished with green onions and soft boiled eggs on top.
Notes
Add a splash of hot sauce for extra heat or top with sliced avocado for creaminess.
