Instructions
Preparation Steps
Preheat oven to 425°F (220°C).
Wash and dry the fingerling potatoes, then cut them in half lengthwise.
In a large bowl, toss potatoes with olive oil, minced garlic, rosemary, salt, and pepper until evenly coated.
Spread the potatoes in a single layer on a baking sheet.
Roast in the preheated oven for 35-40 minutes, turning halfway through, until golden and tender.
Remove from oven and serve warm as a delightful side dish.
Notes
For best flavor, use fresh rosemary and garlic. Can be served with grilled meats or as a vegetarian main with a side salad.
