Instructions
Preparation Steps
Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
Place the seared roast into the slow cooker and pour in beef broth.
Add minced garlic, sliced mushrooms, salt, and black pepper to the slow cooker.
Cover and cook on low for 8 hours, until the meat is tender and easily shredded.
Remove the beef from the slow cooker, shred with two forks, and serve with the sauce and mushrooms.
Notes
For extra flavor, add fresh rosemary or thyme before cooking. Serve with mashed potatoes or steamed veggies.
