Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a bowl, mix the sour cherries with sugar, lemon juice, vanilla extract, and cornstarch.
In another bowl, combine flour and salt, then cut in chilled butter until mixture resembles coarse crumbs.
Gradually add ice water, stirring until the dough forms. Chill for 10 minutes.
Roll out the dough on a floured surface into a circle and place it on a baking sheet.
Spoon the cherry filling into the center, leaving a border.
Fold the edges of the dough over the cherries, pleating as needed.
Bake for 40-45 minutes until golden and bubbly.
Allow to cool slightly before slicing and serving warm.
