Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
Stir in the minced garlic, cumin, coriander, paprika, and red pepper flakes. Cook for 1 minute.
Add diced tomatoes, vegetable broth, and chickpeas. Stir well to combine.
Bring to a boil. Reduce heat and let it simmer for about 20 minutes.
Add spinach and cook until wilted. Adjust seasoning to taste with salt and pepper.
