Instructions
Preparation Steps
Cook the rice noodles according to package instructions, then drain and set aside.
In a skillet, heat the sesame oil over medium heat and sauté garlic and ginger until fragrant.
Add mixed vegetables and stir-fry for about 5 minutes until tender.
Stir in soy sauce and chili paste, mixing well with the vegetables.
Add the cooked noodles to the skillet, tossing everything together to combine.
Serve hot, garnished with chopped green onions.

Add peanuts for a crunchy texture or serve with lime wedges for extra zing!
