Instructions
Preparation Steps
In a large skillet, heat the olive oil over medium-high heat.
Add the chicken thighs to the skillet and cook until browned on both sides, about 6-8 minutes.
Stir in the minced garlic, oregano, and red pepper flakes; cook for another minute.
Pour in the chicken broth and bring to a simmer, scraping the bottom of the skillet.
Reduce heat, add the heavy cream, spinach, and sun-dried tomatoes; simmer for 5 minutes.
Sprinkle grated Parmesan cheese over the top before serving.
